Grilled Spice-Rubbed Shell Steaks

Jamie: I grill a lot of steak. Steak sided with Tomato, Ham, and Cheddar Pie is hands-down my favorite meal. Mama likes to butter her steaks, but I love to select a tender cut and give it a good spicy rub.

Ingredients:

2 teaspoons dry mustard powder
1 1/2 teaspoons dried oregano
1 teaspoon chili powder
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 20-ounce bone-in shell steaks, about 1 1/2 inches thick
1 clove garlic, halved

Instructions:

In a small bowl, stir together the mustard powder, oregano, chili powder, salt, and pepper; set aside. Rub each of the steaks with the cut sides of the garlic halves, pressing the garlic hard into the bone to get the garlic juices flowing. Pat the spice mixture all over the steaks. Let steaks rest at room temperature while you prepare the grill or cover and refrigerate for up to 24 hours (bring the meat to room temperature before grilling).

Prepare the grill for medium direct heat. Grill the steaks for 6 to 7 minutes per side for medium rare. Transfer steaks to a cutting board and let stand for 5 minutes before serving.
